Beoseot Bokkeum

One of the most beloved Korean mushroom dishes is "Beoseot Bokkeum" or Stir-Fried Mushrooms. It's a simple yet incredibly flavorful and popular Korean side dish that pairs well with rice or as a part of a larger Korean meal.
Ingredients
- 250g (about 9 ounces) of assorted mushrooms (shiitake, oyster, or enoki mushrooms work well)
- 2 cloves garlic, minced
- 1 green onion, chopped
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon toasted sesame seeds (optional)
- Salt and pepper to taste
Preparation
Step 1
Clean and Prepare the Mushrooms: Wipe the mushrooms clean with a damp cloth or paper towel. Trim the ends and slice them into bite-sized pieces if they are large. Leave smaller mushrooms whole.
Step 2
Heat the vegetable oil in a large skillet or pan over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced or whole mushrooms to the pan. Stir-fry them for about 3-4 minutes until they start to soften and turn golden brown
Step 3
Add the soy sauce and continue to stir-fry for another 2-3 minutes, allowing the mushrooms to absorb the flavors.
Step 4
Drizzle the sesame oil over the mushrooms and stir to coat evenly. Cook for an additional minute. Season with salt and pepper to taste. Garnish with chopped green onions and toasted sesame seeds (if desired) for added flavor and visual appeal. Serve the Beoseot Bokkeum hot as a side dish with steamed rice, as part of a Korean meal, or as a topping for bibimbap or noodle dishes.
